Breakfast Casserole - Egg & Sausage (Dairy Free!)

Breakfast Casserole - Egg and Sausage
DAIRY FREE!

Ingredients:

  • 8 Eggs 
  • 1 pound Breakfast Sausage (pork/chicken) in bulk or remove casing
  • Lots of Spinach
  • Cherry Tomatoes
  • 1/2 Red Onion
  • Black Olives
  • Truffle Oil
  • Almond Milk
  • White Wine Vinegar 
  • Garlic
  • Sugar
  • Salt & Pepper
  • Parseley
Start:
  1. Saute red onion, garlic in truffle or olive oil, white wine vinegar, salt, pepper, a pinch of sugar, and a drop of water for camelizing
  2. Add Sausage bulk to onion, cook until no more red, make sure it is chopped
  3. Whisk eggs and add a bit of almond milk
  4. Spray baking pan (I like glass)
  5. Chop up spinach and cherry tomatoes
  6. Mix in spinach and chopped black olives into scrambled eggs and pour into baking pan
  7. Top with cherry tomatoes 
  8. Bake on 325 degrees for 30 minutes and check, make sure eggs are set. Remember meat has previously been fully cooked
  9. Eat warm
