DAIRY FREE!
Ingredients:
- 8 Eggs
- 1 pound Breakfast Sausage (pork/chicken) in bulk or remove casing
- Lots of Spinach
- Cherry Tomatoes
- 1/2 Red Onion
- Black Olives
- Truffle Oil
- Almond Milk
- White Wine Vinegar
- Garlic
- Sugar
- Salt & Pepper
- Parseley
Start:
- Saute red onion, garlic in truffle or olive oil, white wine vinegar, salt, pepper, a pinch of sugar, and a drop of water for camelizing
- Add Sausage bulk to onion, cook until no more red, make sure it is chopped
- Whisk eggs and add a bit of almond milk
- Spray baking pan (I like glass)
- Chop up spinach and cherry tomatoes
- Mix in spinach and chopped black olives into scrambled eggs and pour into baking pan
- Top with cherry tomatoes
- Bake on 325 degrees for 30 minutes and check, make sure eggs are set. Remember meat has previously been fully cooked
- Eat warm
