Sausage Kale Vegetable Soup with Fennel
I pretty much took lots of veggies from my fridge and threw them in a pot - you can take my ideas and run with it! Please feel free to add/subtract from the list below, but please keep the sausage, kale, onion, garlic. I just chopped up an equal amount of every veggie in the list :)
Ingredients:
- Italian Sausage - pork or chicken / spicy
- Kale
- Fennel Bulb
- Onion
- Garlic
- Carrots
- Celery
- Brussel Sprouts
- Potatoes
- Chicken Broth
- Fennel Seeds
- Oregano
- Thyme
- Sage
- Parsley
- Red Pepper flakes
- Salt & Pepper
Start:
- Place 2-3 sausages in a pan and cover on medium heat. Turn over when it starts cooking well.
- Chop up all veggies and place in pot, start cooking with some oil.
- Add chicken broth to mix once it is hot and has started to soften a little.
- Sprinkle all seasonings into soup mixture.
- Cook on medium for a little while - 10-15 minutes, or until all veggies are tender.
- Chop up cooked sausages into small pieces and place in soup broth with veggies.
- Cook for another 5 or so minutes to mix flavors together.
- Serve hot - you are done! This was too easy, and very flavorful. I ate it as a meal!
